Pumpkin Curry ~
500g pumpkin puree
125g Tomato puree
150g Carrots
110g Onion
80g Pepper
200ml Vegetable broth
180ml Coconut milk
5 Cloves of garlic
3 (Tb) Spoons of pumpkin Seeds
2 (Tb) Spoons of ginger
1 (Tb) Spoon of oil
1 (Ts) Curry
1 (Ts) Cumin
1 (Ts) Tumeric
½ (Ts) Paprika
½ (Ts) Chilli
½ (Ts) Salt
½ (Ts) Peppper
Mince the onion, garlic, and ginger, and fry it in the pan for 3 minutes
Chop up the carrots and pepper, then add it to the pan, and fry for a further 5 minutes
Add all spices, passata, pumpkin puree, vegetable broth, and coconut milk
Let simmer on low heat for 8 minutes until the veggies are tender
Cauliflower Gratin ~
1 Head of cauliflower
200g Feta cheese
125g Mozarella cheese
1 (ts) Oregano
½ (ts) Salt
½ (ts) Pepper
Chop up the cauliflower, feta- and mozzarella cheese
Bake the cauliflower heads and feta cheese for 20 minutes at 180°C, stirring the gratin every 10 miuntes
Mix in the herbs, add the mozzarella cheese on top, and bake for a further 10 minutes
Feta Spaghetti ~
200g Spaghetti
200g Feta cheese
4 Cloves of Garlic
1 Onion
1 Spoon of oil
1 (Ts) Basil
1 (Ts) Oregano
½ (Ts) Thyme
½ (Ts) Salt
Mince the garlic and onion
Fry it in the pan for 3 minutes
Add the tomato puree and feta cheese, mix in the herbs, and let it cook for 10 minutes
